Curried Pasta Salad
A simple and tasty pasta salad, similar to the one sold in Aussie supermarkets.

- 2 ½ cups pasta spirals 230 grams (uncooked measurements)
- ⅓ cup mayonnaise
- ⅓ cup Greek yoghurt
- 1 teaspoon curry powder
- 1 pinch turmeric powder
- ⅓ cup sultanas
- 1 carrot, grated finely
- ½ capsicum, finely chopped
- salt and pepper (to taste)
- 1 sprig parsley (to garnish)
Boil pasta until just cooked. Drain and allow to cool.
Add sultanas, carrot and capsicum to pasta and stir to combine.
Combine mayonnaise, yoghurt, curry powder and turmeric powder in another bowl and stir well to combine. Pour over pasta and other ingredients and stir well to combine.
Season with salt and pepper and garnish with parsley. Place in fridge and serve cold.
