Toasted Muesli

Start the day right with this addictive combination of oats, seeds, nuts and coconut. A little sweetness and crunch is added to this toasted muesli recipe with maple syrup, honey and olive oil.

  • 8 cups rolled oats
  • 1/2 cup pepitas (pumpkin seeds)
  • 1/2 cup sunflower seeds
  • 1 cup shredded coconut
  • 1 cup chopped natural almonds
  • 1 teaspoon cocoa
  • 1/2 teaspoon cinnamon
  • 1 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup olive oil


  • Pre-heat oven to moderate (160 degrees celsius, fan-forced).
  • Combine oats, pepitas, sunflower seeds, coconut, almonds, cocoa and cinnamon in a large bowl.
  • Combine maple syrup, honey and olive oil in a saucepan and bring to a simmer. Simmer for one minute.
  • Pour over dry ingredients and mix well.
  • Line a large baking tray with baking paper or grease and then transfer the mixture to the tray.
  • Bake for one hour, removing from oven and stirring once or twice during that hour.
  • Allow to cool and store in an airtight container.
