Toasted Muesli
Start the day right with this addictive combination of oats, seeds, nuts and coconut. A little sweetness and crunch is added to this toasted muesli recipe with maple syrup, honey and olive oil.

- 8 cups rolled oats
- ½ cup pepitas (pumpkin seeds)
- ½ cup sunflower seeds
- 1 cup shredded coconut
- 1 cup chopped natural almonds
- 1 teaspoon cocoa
- ½ teaspoon cinnamon
- 1 cup maple syrup
- ¼ cup honey
- ¼ cup olive oil
Pre-heat oven to moderate (160 degrees celsius, fan-forced).
Combine oats, pepitas, sunflower seeds, coconut, almonds, cocoa and cinnamon in a large bowl.
Combine maple syrup, honey and olive oil in a saucepan and bring to a simmer. Simmer for one minute.
Pour over dry ingredients and mix well.
Line a large baking tray with baking paper or grease and then transfer the mixture to the tray.
Bake for one hour, removing from oven and stirring once or twice during that hour.
Allow to cool and store in an airtight container.
