Pre-heat oven to 160 degrees celsius/320 degrees fahrenheit (fan-forced).
Combine oats, pepitas, sunflower seeds, coconut, bran sticks, almonds, cocoa and cinnamon in a large bowl.
Combine maple syrup, honey and olive oil in a saucepan and bring to a simmer. Simmer for two minutes.
Pour over dry ingredients and mix well.
Spray a large baking tray with oil and then transfer the mixture to the tray.
Bake for one hour, removing from oven and stirring 2 or 3 times during that hour.
Allow to cool in tray and then add the dried fruit.
