    Toasted Muesli

    This recipe is based on a variety of recipes I've collected and tested over the years. I've combined and refined all of these recipes to create my own version of the perfect Toasted Muesli Recipe.

    Why make your own muesli?

    • Homemade beats store-bought – hands down! You really can't buy any type of toasted muesli at the shops that will come close to making your own. Trust me - I've tried! I've been making my own for close to 20 years.
    • It's easily adaptable. A bonus with homemade muesli is that you can start with a basic recipe, like this one, and tweak it to create your own perfect start to the day!
    • Create a cosy home. Another bonus is the smell of it toasting. Nothing feels cosier and smells more amazing than a batch of muesli slowly toasting in the oven.

    Ingredient notes

    This nutritious breakfast option contains a variety of ingredients that each have plenty of health benefits:

    • Rolled oats are the foundation of any muesli. I use traditional rolled oats. Oats, are considered a superfood, with an abundance of vitamins, minerals and fibre. They are a rich source of beta-glucan, a soluble fibre that can help lower cholesterol re-absorption.
    • Bran sticks can be added to up the fibre content and add texture. You could also use bran or oat flakes.
    • Shredded coconut adds a lovely nutty flavour. Coconut flakes or desiccated coconut could also be used as an alternative. If you don't like coconut, leave it out and add some extra oats.
    • Sunflower seeds and pepitas add crunch and many beneficial nutrients. Alternatives include chia, flax, and sesame seeds.
    • Flaked almonds bring a sweet, buttery and nutty flavour to the muesli. Chopped natural almonds or slivered almonds are a good substitute. For nutty crunch with a stronger flavour, use chopped hazelnuts, pecans or walnuts.
    • Cocoa and cinnamon are added to bring depth to the flavours and boost the aromatic appeal of this breakfast favourite. You can't actually taste these in the final product – but if you're cautious about adding them, cut down on the quantity of leave them out completely.
    • Maple syrup, honey and vegetable oil create sweetness and crunch when added to the ingredients prior to toasting.
    • Chopped dried mango is my favourite dried fruit to add to this mix. You could go basic with sultanas or use another favourite dried fruit. Of course, adding the dried fruit is optional.

    How to make your own Toasted Muesli

    Making this Toasted Muesli is a fairly straightforward process. You're going to toast the muesli in an oven heated to 160 degrees celsius/320 degrees fahrenheit (fan-forced) – so preheat the oven first.

    In a large mixing bowl, combine the oats, pepitas, sunflower seeds, coconut, bran sticks, almonds, cocoa and cinnamon (see images 1 and 2).

    Combine the maple syrup, honey and olive oil in a saucepan and bring to a simmer. Simmer for two minutes (see image 3).

    Pour this mixture over dry ingredients (see image 4) and mix well.

    Spray a large baking tray with oil and then transfer the mixture to the tray (see images 5 and 6).

    Bake for one hour, removing from oven and stirring 2 or 3 times during that hour.

    Allow to cool in tray and then add the dried fruit (see image 7).

    TIP: Once you have removed the muesli from the oven, give it a stir or two as it's cooling so it doesn't clump together.

    Serving and storage

    Enjoy your toasted muesli with milk or yoghurt, and it's made even better with fruit. Sprinkle in chopped berries, drizzle with passionfruit pulp or simply slice up some banana.

    Whichever way you enjoy your muesli, I hope it helps you start the day off just right!

    Store in an airtight container for up to 2 months.

    • 8 cups rolled oats (630 grams)
    • ½ cup pepitas (pumpkin seeds) (80 grams)
    • ½ cup sunflower seeds (70 grams)
    • 1 cup shredded coconut (70 grams)
    • 1 cup bran sticks (90 grams)
    • 1 cup flaked almonds (90 grams)
    • 1 tablespoon cocoa
    • 1 teaspoon cinnamon
    • 1 cup maple syrup
    • ¼ cup honey
    • ⅓ cup vegetable oil
    • ½ cup dried fruit (optional)

    Instructions
     

    • Pre-heat oven to 160 degrees celsius/320 degrees fahrenheit (fan-forced).
