This Curried Pasta Salad is the homemade version of the side that's been sold in Aussie supermarkets for decades.

It's almost effortless to prepare and goes well with a BBQ chicken, BBQ'd meats, schnitzels and so much more.

Curried Pasta Salad: the ingredient list

To make this salad, you'll need:

  • pasta spirals
  • mayonnaise
  • Greek yoghurt
  • curry powder
  • turmeric powder
  • sultanas
  • carrot
  • capsicum
  • salt and pepper (to taste)
  • parsley (to garnish).

Making Curried Pasta Salad

Start by boiling the pasta until just cooked. Drain and allow to cool.

In the meantime, finely grate the carrot and finely chop the capsicum.

Add the sultanas, carrot and capsicum to the cooled pasta and stir to combine.

Combine the mayonnaise, yoghurt, curry powder and turmeric powder in another bowl and stir well to combine. Pour over pasta and other ingredients and stir well to combine.

Serving your pasta salad

Season with salt and pepper and garnish with parsley.

Place in the fridge and serve cold.

Your pasta salad should last a few days in the fridge.
