This old school Curried Rice Salad is easy to put together and takes just a matter of minutes to prepare.

It requires only 5 ingredients and is a delicious salad to serve at a summer party or BBQ.

Salad days

My mum made this salad often during the 1980’s.

It was a regular at our summer BBQs and I loved the combination of sweet sultanas and salted peanuts – even as a child.

Mum still occasionally gets out this recipe today.

And with good reason. That simple flavour combo is just as good today.

And this Curried Rice Salad with sultanas and peanuts is so easy to make.

Curried Rice Salad ingredients

To make this salad you’ll need:

  • 2 cups cooked rice (cooled and made from about 2/3 cup uncooked rice)
  • 1/3 cup sultanas
  • 1/3 cup roasted and salted peanuts
  • 2 teaspoons Keen’s curry powder (or a similar curry powder)
  • 2 tablespoons olive oil (or canola oil or your preferred oil).

Mix and go

To make this salad, you just mix all of the ingredients together and you’re good to go.

Yes, it’s that easy.

Ingredients

  • 2 cups cooked rice (from about 2/3 cup uncooked rice)
  • 1/3 cup sultanas
