    Curried Rice Salad

    With just 5 ingredients, this old fashioned Curried Rice Salad is a delicious and budget-friendly salad – perfect to serve at a summer party or BBQ.

    My mum made this salad often during the 1980's. It was a regular at our summer BBQs and I loved the combination of sweet sultanas and salted peanuts – even as a child. Mum still occasionally gets out this recipe today. And with good reason. That simple flavour combo is just as good today.

    Ingredient notes

    That's right, you'll need just 5 simple ingredients:

    • cooked rice (I recommend long grain white rice for this recipe. However, you could also use basmati, brown rice or whatever rice you have in the cupboard.)
    • sultanas
    • roasted and salted peanuts
    • Keen's curry powder (or a similar curry powder)
    • olive oil (or canola oil or your preferred oil).

    How to make Curried Rice Salad

    To make this salad, you just mix all of the ingredients together and you're good to go. Yes, it's that easy.

    Serving and Storage

    Serve this salad cold. Store it, covered or in an airtight container, in the fridge. It should last 2-3 days if stored properly in the fridge. There are risks in eating leftover cold rice, so please make sure you follow health recommendations for cooking and storing rice and make your own decision.

    Ingredients
      

    • 2 cups cooked rice (from about ⅔ cup uncooked rice)
    • ⅓ cup sultanas
    • ⅓ cup roasted and salted peanuts
    • 2 teaspoons Keen's curry powder (or a similar curry powder)
    • 2 tablespoons olive oil (or canola oil or your preferred oil)

    Instructions
     

    • Allow cooked rice to cool.
    • Mix all ingredients together in a bowl and serve.
    • Store in the fridge.

    Notes

    Storing: The salad should last for 2-3 of days, covered, in the fridge. 
    Freezing: Not suitable.
