This Banana Slice Recipe is the perfect solution when you have just one, lonely, overripe banana – not quite enough banana for cake or bread!

Banana Slice.

Yes, this slice is basically a cake in a tin. But it's easier to bake and has extra caramelised edge pieces to savour in each bite. (And if you like the sound of cake in a slice tin, you should also check out my Texas Sheet Cake recipe.)

Ingredient notes

You'll need just one very ripe banana for this recipe. The rest of the ingredients required for the slice and the icing are pictured below. The full list of ingredients and quantities are in the recipe card at the end of this post.

How to make Banana Slice

Start by pre-heating the oven to moderate (180 degrees celsius/355 degrees fahrenheit, fan-forced) and greasing a slice tin (27 x 17cm) and lining with baking paper.

Sift the flour, salt, bicarb soda, baking powder and spices into a mixing bowl. Add the sugar and stir through to combine (see image 1). Add the wet ingredients to mixing bowl and stir until combined. Pour into the prepared slice tin and smooth out the mixture to ensure it's spread evenly in the tin (see image 2). Bake for 25 minutes and then allow to cool completely in the tin.

Before icing, remove slice from the tin using overhanging paper.

TIP: Use a butter knife to release slice from edges of tin if necessary.

To make the icing, add all the ingredients (apart from nutmeg) to a mixing bowl and beat with electric beaters until smooth and fluffy. Spread over completely cooled slice. Sprinkle with nutmeg and cut into 15 pieces (see image 3).

How to make Banana Slice.

Storage

Store the slice in an airtight container for up to 3 days (room temperature or fridge).

TIP: If stored in the fridge, you can enjoy it cold or allow it to reach room temperature before serving.

You can freeze the slice, un-iced, for up to 3 months. Wrap the slice in plastic wrap well before freezing and allow it to thaw out in the fridge overnight when you're ready to enjoy.

Equipment

  • slice tin (27 x 17 cm)

Ingredients
  

Slice

  • 1 cup SR flour (1 cup = 150 grams) (1 cup SR flour = 1 cup plain/all purpose flour + 2 teaspoons baking powder)
  • 1 pinch salt
  • ¼ teaspoon bicarb soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¾ cup caster sugar (¾ cup = 160 grams)
  • 1 egg, lightly beaten
  • 60 grams butter, melted
  • ¼ cup milk (¼ cup = 62.5ml)
  • ⅓ cup mashed banana (about 1 small banana)

Icing

  • 125 grams block cream cheese
  • 30 grams butter
  • ¾ cup icing sugar (¾ cup = 110 grams)
  • 1 tablespoon lemon juice
  • little extra nutmeg (sprinkled over icing, if desired)

Instructions
 

  • Pre-heat oven to moderate (180 degrees celsius/355 degrees fahrenheit, fan-forced).
  • Grease the slice tin and line with baking paper, leaving excess on the sides to lift out slice once cooked.
  • Sift the flour, salt, bicarb soda, baking powder and spices into a mixing bowl. Add the sugar and stir through to combine.
  • Add wet ingredients to mixing bowl and stir until combined.
  • Pour into prepared slice tin and smooth out mixture to ensure it's spread evenly in the tin.
  • Bake for 25 minutes.
  • Allow to cool completely in the tin.
  • Remove slice from the tin using overhanging paper. (Use a butter knife to release slice from edges of tin if necessary)

Icing

  • Add all ingredients (apart from nutmeg) to a mixing bowl and beat with electric beaters until smooth and fluffy.
  • Spread over completely cooled slice.
  • Sprinkle with nutmeg and cut into 15 pieces (3 x 5).

Notes

Storing: Store the slice in an airtight container for up to 3 days (room temperature or fridge). If stored in the fridge, you can enjoy it cold or allow it to reach room temperature before serving.
