Craving a little Christmas magic? This cosy Yulefest Pudding is made in a mug, ready in under 10 minutes and perfect for one (or sharing with someone special)!

Whether it's Christmas or an Aussie Christmas in July, this quick and easy microwave pudding gives you a taste of traditional Christmas pudding without all the fuss and expense of making a full-sized pudding.

Recipe inspiration

This little pudding was inspired by our winter stay in the Blue Mountains—the home of Yulefest and a place brimming with history and old-world charm. The Blue Mountains Yulefest tradition began in 1980, when a group of Irish visitors staying in Katoomba remarked that the chilly, snowy weather reminded them of Christmas back home. Their host created a traditional Christmas feast, and the idea soon spread throughout the region.

Our stay and experiences were kindly hosted by The Metropole Guesthouse, Scenic World and Visit Blue Mountains. A heartfelt thank you to all three for giving us such a magical taste of this wonderful place and its much-loved winter tradition. Read more about Yulefest’s history.

Ingredient notes

You’ll find everything you need for this recipe at the supermarket. I use store-bought Krummies breadcrumbs rather than fresh breadcrumbs.

If you don’t have brandy, substitute it with cognac, sherry, rum or whisky. For an alcohol-free pudding, simply use orange or apple juice—or even water.

How to make Yulefest Pudding

This pudding is wonderfully simple and ready in less than 10 minutes.

First, place the mixed dried fruit and brandy in a microwave-safe mug (see image 1). Microwave on high for one minute.

Add the bicarb soda, stir and leave to stand for one minute. Add the remaining ingredients (see image 2) and stir until well combined (see image 3).

Microwave on high for a further minute, or until the pudding is cooked through. Allow it to stand briefly before serving, as the mug and pudding will be very hot.

How to make yulefest pudding.

Serve warm with custard or cream. Garnish with a few extra pieces of dried fruit, if desired.

Storage

Cover any leftover pudding and store it in the fridge for up to three days. Reheat gently in the microwave before serving.

  • 1 microwave-proof mug

Ingredients
  

  • ⅓ cup mixed dried fruit (⅓ cup = 50 grams)
  • 2 tablespoons brandy (or substitute cognac, sherry, rum, or whisky – or even just water or juice)
  • 1 pinch bicarb soda
  • 1 tablespoon brown sugar
  • 30 grams butter, melted
  • 1 egg, lightly beaten
  • 1 tablespoon breadcrumbs (store-bought or fresh)
  • 1 ½ tablespoons SR flour
  • ⅛ teaspoon mixed spice

Instructions
 

  • Place mixed dried fruit and brandy in the mug. Microwave on high for one minute.
  • Add the bicarb soda, stir and leave to stand for one minute.
  • Add remaining ingredients and stir until combined. Microwave on high for one minute.
  • Serve warm with custard or cream. Garnish with a few extra pieces of dried fruit, if desired.
