    This White Chocolate Rocky Road Recipe delivers everything you love about rocky road – pillowy softness, crunch and a little chew – all wrapped up in smooth white chocolate.

    Love at first bite

    It's pretty as a picture and absolutely perfect for parties.

    This recipe is a variation of traditional rocky road and you can mix it up to suit your own tastes.

    It's super easy to make, no baking required, and will keep for a few weeks in the fridge.

    It's great for Christmas, Easter and parties, and is also well-suited to gifting.

    Ingredient notes

    To make this rocky road, you'll need:

    • marshmallows (I use Pascall's Pink and White marshmallows and recommend using a similarly good quality marshmallow)
    • lolly snakes (or substitute dried cranberries or other dried fruit)
    • rice bubbles (or substitute cornflakes or another crunchy cereal)
    • plain biscuits (or substitute pretzels)
    • fruit tingle lollies (or substitute almonds, pistachios or other nuts)
    • white chocolate (use good quality chocolate for best results).

    How to make White Chocolate Rocky Road

    You'll need 15 mins max to make this white chocolate rocky road.

    Start by preparing a slice tin (about 28 x 18cm) by lining with baking paper.

    Next, chop marshmallows in half and snakes into small pieces and add to a mixing bowl.

    Crush the biscuits and fruit tingles (using a rolling pin or by chopping with a sharp knife) and add to mixing bowl.

    Add rice bubbles to the mixing bowl and stir to combine.

    Now all we need to do is add the white chocolate!

    Melt the chocolate by placing in a microwave for 20 second bursts and stirring between each burst until chocolate is melted.

    Pour the melted chocolate over the ingredients in the bowl and stir until everything is completely coated in chocolate.

    Pour the mixture into the tin and spread the mixture out to edges, flattening with a metal spoon.

    Place into the fridge for at least an hour to set.

    Cut into squares once set.

    • 280 grams marshmallows

    • 45 grams plain biscuits
