    Fruit Salad Balls

    I've always LOVED canned fruit salad. Here, you can add just three extra ingredients to the mix and enjoy it in the form of a convenient little Fruit Salad Ball snack.

    Perfect for lunchboxes, you can make them in about 5 minutes. Ready?

    The Recipe for Fruit Salad Balls

    This super simple recipe requires just 4 ingredients and is based on the popular Pineapple Balls recipe.

    Ingredients for Fruit Salad Balls

    To make these (extremely more-ish) little balls, you’ll need:

    • 250 grams Marie Biscuits (or any other plain, sweet biscuits)
    • 410 grams canned fruit salad (in juice)
    • 395 grams condensed milk
    • 2 cups desiccated coconut (unsweetened) – ¾ cup goes into the mixture and the rest is for rolling the balls in.

    Making Fruit Salad Balls

    Start by crushing biscuits to a fine crumb. Use a food processor or chopper or simply place the biscuits in a freezer bag and crush them using a rolling pin.

    Next, drain the fruit salad and discard (or drink!) the juice.

    Combine the biscuits crumbs, drained fruit salad, condensed milk and ¾ cup of the desiccated coconut – the remaining cup and a quarter of coconut will be used to coat the balls.

    Scoop out tablespoons of mixture and roll into balls. Roll each ball in the remaining coconut.

    Place the balls onto a tray lined with baking paper and place into the fridge for at least 2 hours to allow pineapple balls to set.

    Once set, store in the fridge in an airtight container.

    Stored in an airtight container in the fridge, they should last up to 5 days.

    Q. How do I crush the biscuits?

    If you have a food processor or chopper, use that. Otherwise, simply place the biscuits in a freezer bag and crush them using a rolling pin.
