    Muesli Slice

    This Muesli Slice is crunchy, buttery and packed with plenty of muesli goodness! It's perfect for a breakfast on-the-go or lunchbox treat.

    You'll need just 5 minutes and 5 ingredients to get this slice into the oven. You can use store-bought or homemade muesli. If you can't find any muesli in the cupboard and can't be bothered going to the shops, you don't have to miss out. I've included substitution tips to help you cobble together some "muesli" from what you might have in the cupboard.

    Ingredient notes

    Apart from the muesli, you'll need just 4 other simple ingredients: plain (all purpose) flour, desiccated coconut, brown sugar and butter.

    As with most recipes, you can use white sugar instead of brown, but the flavour may not be quite the same.

    If you don't have muesli, you can use a mixture of any of the following:

    • oats
    • weetbix, crushed
    • bran sticks
    • pepitas and sunflower seeds
    • crushed almonds, walnuts, pecans or other nuts
    • sultanas or diced dried fruit.

    Drizzle your "muesli" with a little honey, maple syrup and vegetable oil and toast a little before using in this muesli slice recipe.

    How to make Muesli Slice

    This recipe is part of my quick and easy recipe collection – it should take only 5 minutes to get it into the oven. Ten minutes if you're a slow coach. Ready? Set. Go!

    Pre-heat your oven to moderate (180 degrees celsius / 360 degrees fahrenheit, fan-forced). Grease a slice tin and line with baking paper, leaving extra on each side (to pull the slice from the tin once baked and cooled).

    Mix all of the dry ingredients together in a mixing bowl and create a well in the centre (see image 1). Add the melted butter and stir to combine (see image 2). Press into prepared slice tin firmly and level out with the back of a spoon (see image 3).

    Bake for 30 minutes or until a deep golden colour. Remove from oven and allow to cool in tin (see image 4). Remove from tin and slice into squares using a sharp knife (see image 5).

    Storage

    Store this muesli slice in an airtight container at room temperature for up to 7 days. You can also freeze it – wrap well and place in an airtight container before freezing for up to 2 months.

    • slice tin (around 27 x 17cm)

    Ingredients
      

    • 2 cups muesli (230 grams)
    • 1 cup brown sugar (150 grams)
    • 1 cup desiccated coconut (90 grams)
    • 1 ½ cups plain / all purpose flour (210 grams)
    • 180 grams butter, melted
